Is it me or does everyone have that one child who is ‘difficult’? I love my five year old to bits, he is loveable but infuriating at the same time. It might sound silly but I can’t help but blame myself for it. I was going through a very stressful time when pregnant with him and when he was a baby. I worry that I may have been so caught up with what was going on and didn’t pay him enough attention or that some of that stress might have affected his development before he was born. It’s possibly just a case of the well known, ‘mum-guilt’ which I blogged about here.
Anyway, every morning the little ****, (insert swear word, whatever one is your favourite, trust me he will fit it!), hurls abuse at me because of something insignificant. The other day I was a ‘fatty idiot’. (Why did you call me that darling?…. Because you are fat.) This morning at 7.00 am he hated me. At 7.05 he DOUBLE hated me. Impressive.
I know he doesn’t really mean it, but it doesn’t hurt to still eat healthily, fatty idiot or just plain idiot aside.
So I made this love healthy soup with some leftover bits and it actually worked!
Half an average size celeriac, peeled and chopped into bite-size pieces.
Two small potatoes peeled and chopped
One large clove of garlic
Handful of fresh spinach leaves
One small onion
Half a lemon
Cracked black pepper
500 mils vegetable stock
Here’s how I made it….
Gently fry the diced onion in Olive Oil then when slightly softened add the garlic.
Add the celeriac and potato and give it a good stir.
Add the stock and bring to a boil. Then simmer gently until the vegetables are almost cooked. Add the spinach.
Blitz up the soup mixture until it is smooth and silky. Add a squeeze of lemon.
This was delicious with a whole meal bagel thing I found knocking around the kitchen and some creamy Philadelphia.
