This has been a week of epic failures…. me at my interview, the car on it’s MOT and my husband to fix the downstairs toilet. So in a week of let downs this was a blessed success. My children are like most and are wary of vegetables. My husband is not much better. They eat some, in certain forms, on certain days, in certain dishes, chopped a certain way…. but it’s an uphill struggle. So imagine my delight when I served this curry full of beta carotene bursting veg and the responses varied from, ‘This is awesome’, ‘The curry’s nice’, ‘This is better than the school curry’. The only criticism was from a ridiculously fussy boy, ‘Ew, it’s too garlicky’. (He doesn’t even know what garlic is). Anyway, they mainly all loved it and it’s healthy, without them realising. If they knew they’d eaten butternut squash there would be a plot to overthrow me I think, but they have no idea. Also, if you are trying to lose weight or on Slimming World this is great as has very few calories or Syns. Also, if you love takeaway curry but are trying to save money, this is a great substitute. My only issue is that it take a a while to make- but you could always make double and freeze some. Recipe is on this link. Enjoy and please let me know how you get on!
